KETO PEANUT BUTTER COOKIES

Image
KETO PEANUT BUTTER COOKIES If there is anything better than just a spoonful of peanut butter – it is a peanut butter cookie – which is why these keto peanut butter cookies have gotten a permanent place in my heart – and my weekly meal prep! These low carb cookies can be made with any low carb sweetener you choose. I have used everything from monk fruit to Swerve and they all taste great to me. You can even use a powdered sweetener for an even smoother cookie. So delish! These keto cookies are flourless too – so they are also gluten-free! You can even make them with different nut butters to your liking. My all-time favorite nut butter next to peanut butter is cashew butter… and trust me when I say keto cashew cookies dunked in cashew milk are highly addicting. Start by mixing up the ingredients until well combined in a large bowl. You can do this by hand – you do not need a mixer like you do for my Chocolate Chip Keto Cookies. Then using a spoon, scoop out a bit of the mixture and roll ...

MEATBALLS WITH ATTITUDE

Image
Meatballs with attitude! Well, yes, these little meatballs certainly have attitude! The flavor is really lovely. I’m always looking for new ways to enhance certain foods, making them fuller in flavour, using fresh ingredients and of course, creating recipes that are moist, have texture and taste. Often I have eaten meatballs and they have been so dry and totally lacking in flavour. This is such a shame, especially when you use good ingredients, such as a good quality ground meat so that’s what made me decide to make up my very own recipe and hence the name Meatballs With Attitude! In this recipe, I show you how to make your meatballs with some flavour combinations you may not have thought of using, all of which, when they are combined, ensure your meatballs will be juicy and succulent, and yet a little crispy on the outside. They go perfect with a sauce of your choice, maybe a tomato sauce, or a cream sauce & pasta, or stick toothpicks in them, make up some sweet chili sauce or tza...

Vegetable Soup

Minestrone - delicious vegetable soup This soup was especially fond of the genius of the Renaissance - Leonardo da Vinci. The soup is thick and more like a vegetable stew than soup. Blueberry Cheesecake Crumb Cake Blueberry Cheesecake Crumb Cake is delicious combo of two mouthwatering desserts: crumb cakeand blueberry cheesecake. With this simple and easy dessert recipe you’ll get two cakes packed in one amazing treat. Creamy and smooth cheesecake is bursting with blueberries! The crust and topping are made from the same mixture, which means much less work and dirty dishes, too. Blueberry Cheesecake Crumb Cake However, this is not the first time for me to add cheesecake filling in a crumb cake. It’s such a good combo!!! Creamy filling trapped inside moist cake with crunchy streusel crumb on top is irresistible! Maybe you have seen (or even tried) my Strawberry Cheesecake Coffee Cake, Raspberry Cream Cheese Coffee Cake or Easy Cinnamon Coffee Cake recipes. Blueberry Cheesecake But, this time I overloaded my crumb cake with filling and made a really generous layer of cheesecake filling. Actually, there’s more filling than crust and topping in this cake. However, thi...

Chicago Crunchy Cookies

Chicago Crunchy Cookies My sister gave me this recipe at least 30 years ago. I have made this recipe way too many times to count. Chicago Crunchy Cookies are delicious and addictive…This recipe makes a lot of cookies and they freeze great too. Chicago Crunchy Cookies are great to make when you need a lot of cookies such as for a bake sale, family picnic or to share at work. All that you need to serve with these delicious cookies is either a glass of milk or a cup of coffee. My Grandma Rose passed her love of cookies down to me and now I’ve passed that love on down to my grandson…she’d be pleased. Get IngredientsPowered by Chicory Cookies Cookies are hands down my favorite “dessert.” There is something so sweet about having a couple of cookies after lunch or with a cup of coffee for a mid-afternoon snack. My love for cookies was passed down to me from my Grandma Rose. I can’t think of a time that I went over to her house and she didn’t have cookies in her pantry. My Grandma Rose always ...

Lemon Zucchini Bread

Image
Lemon Zucchini Bread Isn’t it always nice to find a new perfect use for zucchini? Even though I don’t grow zucchini I usually tend to keep it on hand during the spring and summer months. I love using it for Chicken Enchilada Zucchini Boats, Lasagna Zucchini Boats, Soup, and I’m obsessed with covering it with cheese, but basically the best thing you can do with zucchini is turn it into a dessert like these Zucchini Cupcakes with Cream Cheese Frosting or this purely irresistible Lemon Zucchini Bread! I’ve actually had lemon zucchini bread on my to-try list for years but for some reason I just kept forgetting about it, but not today! I had a bunch of zucchini in the fridge and a bunch of lemons so of course it had to happen and I’m so glad it did because I’m crazy about this bread! Yes of course I started by eating just one slice but then every time I’d walk into the kitchen I couldn’t help but go and cut off another little piece. And it’s like banana bread, it gets even better after its ...

Keto Lasagna WITH NOODLES!

Image
Keto Lasagna WITH NOODLES! I don’t know where to begin. This lasagna was EVERYTHING. It tastes BETTER than regular lasagna..BETTER. I am being 100% honest guys. You need to make this like ASAP. The “noodles” themselves are delicious on their own but pair that with a ton of cheese, meat and sauce…and OMG. That’s all I can say. I slightly tweaked this recipe from it’s original I found here. (The author, Kyndra is a genius & I give her full credit!) Ingredients: Noodles: 2 eggs 4 oz cream cheese, softened 1/4 cup Parmesan cheese, grated (I used half real parmesan and half dried) 1 1/4 cup mozzarella cheese, shredded (130g) Pinch of each: majoram, thyme, rosemary 1/2 tsp basil 1/2 tsp oregano 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp salt Filling: 1 lb ground beef 1 1/2 cups of lower-carb pasta sauce (I used “Classico Tomato Basil” but added some salt, splenda and basil to taste ) 3/4 cup (90g) mozzarella cheese, shredded 6 tbsp 2% cottage cheese 1/3 chopped onion 1oz finely c...
